CHAKALAKA POT
  • Description:

    A great way to serve two old favourites – chakalaka and boerie – and fresh sauce to finish it off.

  • Ingredients:

    15ml oil
    300g Championship boerewors
    1 onion, sliced
    6 carrots, sliced
    ½ cabbage, shredded

    15ml roasted masala
    15ml mango achar
    salt and freshly ground black pepper
    toasted ciabatta slices to serve

    For the coriander yoghurt sauce:
    Finely chop a handful of coriander and mix with 250 ml plain yoghurt and a pinch of cumin.

  • Method:

    1. Heat the oil in a pot over the coals or on the stove and fry the boerewors until done.
    2. Remove from the pot and set aside.
    3. Fry the onion in the same pot until fragrant.
    4. Add the carrots and cabbage and stir-fry for 1 minute.
    5. Stir in the roasted masala and mango achar and mix well.
    6. Cut the boerewors into pieces and add to the pot.
    7. Add a little water, cover and simmer until the carrots are done and tender.
    8. Season with salt and pepper and serve with the coriander yoghurt sauce and slices of toasted ciabatta.
