Cheesy Soup
With German Sausages

    If you’re looking for a soup recipe with a difference, try your hand at this one. One tasty spoonful after the other, you won’t be able to get enough. It’s great for those cosy, wintry nights at home and will definitely leave an impression on guests if you serve it at special occasions too. Serves 4.

  • Ingredients:

    2 tbsp. (30 ml) olive oil
    1 onion; peeled and thinly sliced
    1 carrot; peeled and grated
    250 g button mushrooms; sliced
    1 large potato; peeled and chopped
    4 thyme sprigs; leaves only

    2 Bockwurst sausages; sliced
    1 cup (250 ml) lager
    ¼ cup (60 ml) cornflour
    1 L chicken stock

    1 cup (250 ml) cream
    1 cup (250 ml) grated Emmentaler
    Salt and freshly ground black pepper

  • Method:

    1. Heat oil in a medium pot and fry onions, carrots, mushrooms, potatoes, thyme and sausage for about 5 minutes or until golden.
    2. Add the cornflour and stir to form a paste.
    3. Pour in the beer and cook for 2 minutes.
    4. Add the stock and cream and stir slowly for 5 minutes, until soup boils and thickens.
    5. Remove soup from heat and stir through grated cheese.
    6. Season soup with salt and pepper to taste.
