Ice Cream Lollies
  • Description:

    It will take nothing more than one bite for these ice cream lollies to spark a lasting love affair. This Valentine’s dessert is made with homemade chocolate cookies which are sandwiched together with caramel ice cream, then dipped in melted chocolate. So much yum! To get the best out of your creations, make sure the ice cream is frozen solid before you dip the lollies in the gooey melted chocolate.

  • Ingredients:

    Cookies
    150 g butter
    125 ml (1/2 cup) brown sugar
    125 ml (1/2 cup) golden syrup
    375 ml (1 1/2 cups) cake flour
    80 ml (1/3 cup) cocoa powder

    5 ml (1 tsp.) bicarbonate of soda
    200 g dark chocolate chips

    To finish:
    1 litre vanilla ice cream
    1 can (387 g) caramel condensed milk
    About 400 g dark chocolate, melted

  • Method:

    1. Preheat the oven to 180 °C. Line a baking sheet with baking paper.
    2. Cookies: Cream together the butter, sugar and golden syrup until pale and thick.
    3. Sift together the flour, cocoa powder and bicarbonate of soda and add to the butter mixture. Beat until a soft dough forms. Add the chocolate chips and chill for 30 minutes.
    4. Roll pieces of the dough into small balls (weigh the pieces beforehand ensuring the are the same size) and arrange on a baking sheet, spacing them fairly far apart. Flatten the balls slightly with a fork.
    5. Bake for 10-12 minutes. Cool.
    6. To finish: Soften the ice cream slightly. Add the condensed milk and stir in to create a marbled effect.
    7. Sandwich the cookies together with ice cream and freeze until firm. Insert a stick into each lolly and freeze.
    8. Melt the chocolate and dip the lollies in the melted chocolate. Stand the lollies in a glass and freeze.
