MAYO CAKE

  • Ingredients:

    For the chocolate mayo cake:
    11/2 cup (375 ml) water
    1 cup (250 ml) mayonnaise
    1 tsp. (5 ml) vanilla essence
    3 cups (750 ml) self-raising flour
    1/3 cup (80 ml) cocoa
    1 cup (250 ml) sugar

    1 tsp. (5 ml) salt
    1 tsp. (5 ml) bicarbonate of soda

    For the chocolate icing:
    1/2 cup (100 ml) cocoa
    2 tbsp. (30 ml) margarine; melted
    1 cup (250 ml) icing sugar

    3 tbsp. (45 ml) warm water  
    1⁄2 tsp (3 ml) vanilla  
    1/2 slab (40 g) milk chocolate: grated, to decorate

  • Method:

    For the chocolate mayo cake:

    1. Preheat oven to 180 °C. Grease two 20 cm round springform cake pans.
    2. In a large bowl, combine the water, mayonnaise and vanilla, and mix well.
    3. Sift flour and cocoa powder into a bowl and then add sugar, salt and bicarbonate of soda. Gradually blend into mayonnaise mixture until well combined.
    4. Divide the batter between the two prepared cake pans. Bake for 35–40 min. or until a toothpick inserted into the centre comes out clean. Allow to cool completely on a wire rack.
    5. Using a large bread knife, carefully slice the domed top off one of the cakes to form a straight base onto which you’ll place the other cake.

    For the chocolate icing:

    1. Place all ingredients, except for the grated chocolate, into a saucepan and gently heat until smooth and well combined. Set aside to cool and thicken.
    2. Pour a little of the icing onto the trimmed cake and smooth out to cover the entire layer. Place the second cake (uncut one) on top of this and ice with remaining icing. Decorate with grated chocolate.
