NACHOS
  • Description:

    This one-dish dinner is a stealthy way to get your kids to eat some beans and veggies, without a single complaint. Try it today and feed the whole family.

  • Ingredients:

    2 tbsp. (30 ml) olive oil
    1 onion; peeled and finely chopped
    2 garlic cloves; peeled and crushed
    2 tbsp. (30 ml) ground cumin
    500 g beef mince
    Salt and freshly ground pepper
    1 tbsp. (15 ml) tomato paste
    1 x 410 g tin chopped peeled tomatoes
    ½ cup (125 ml) beef stock

    1 x 410 g tin baked beans
    500 g nacho chips (corn chips)
    1 cup (250 ml) sour cream; to serve

    For the avocado, chilli and red onion salsa:
    2 avocados; peeled and chopped
    ½ red onion; peeled and finely chopped

    1 green chilli; finely sliced
    10 baby tomatoes; quartered
    Handful of fresh coriander; roughly chopped
    Drizzle of olive oil
    Salt and pepper
    Squeeze of lime juice

  • Method:

    1. Heat a little olive oil in a large, heavy-based pot over high heat and sauté onion until lightly golden.
    2. Add garlic and cumin and fry for about a minute or until fragrant.
    3. Add beef mince, season with salt and pepper and brown well.
    4. Add tomato paste, chopped peeled tomatoes and beef stock and simmer with the lid on for an hour, or until meat is meltingly tender. If the mixture is still quite saucy, remove lid and allow to reduce.
    5. Stir in baked beans and simmer for 10 min.
    6. Combine all the salsa ingredients and toss together.
    7. To assemble, arrange the nachos on a large platter and pour mince mixture on top.
    8. Top with the avocado salsa and serve with sour cream. Dig in!
