STUFFED EGGS
  • Description:

    You won’t be able to stop after you’ve had one of these delectable delights They’re packed with flavour, and even better, won’t come close to breaking the bank! Preparation: 10 min. Cooking: 15 min. Makes 18/Serves 6

  • Ingredients:

    9 eggs
    1/3 cup (80 ml) mayonnaise
    1 tsp. (5 ml) white vinegar 

    1 tsp. (5 ml) yellow mustard
    Salt and pepper
     

    2 tbsp. (30 ml) parsley; chopped
    Paprika; to garnish 

  • Method:

    1. Simmer eggs in boiling water for 9 min. or until hard boiled. Cool in running water before gently cracking and peeling under water.
    2. Halve the eggs lengthwise and carefully remove yolks.
    3. Place yolks in a bowl with mayonnaise, vinegar and mustard and mash well using a fork.
    4. Using a teaspoon, spoon the mashed egg mixture back into the whites.
    5. Arrange on a platter and sprinkle with chopped parsley and paprika before serving.
