    You can't make boerewors more gourmet than this.

  • Ingredients:

    1 pack Venison Boerewors (thick)
    6 long bread rolls (sturdy ones work best)
    1 tin tomato and onion relish
    1 tbsp. sugar

    1 tsp. thyme leaves
    1 tsp. oregano leaves
    4 - 6 cloves garlic; peeled
    2 onions; peeled and sliced into rings

    1 punnet ripened vine tomatoes
    Olive oil
    1 tsp. garlic flakes
    Handful of roasted pine nuts (optional)

  • Method:

    1. Stir together the relish, sugar and herbs over moderate heat.
    2. Cook until reduced and thickened.
    3. Preheat the oven to 180 °C.
    4. Place the tomatoes, garlic and onions on a baking tray, drizzle well with olive oil and roast for 20 min.
    5. Mix the roasted tomatoes and garlic with the reduced relish.
    6. Braai the Venison Boerewors to perfection.
    7. Cut and butter the rolls.
    8. Add mustard if you wish and line with a good length of sausage (it should always hang out on both sides).
    9. Top with relish, onions and pine nuts.
    10. Serve.
