    These healthy and refreshing Greek salad cups with a maas dressing are perfect as a side or even a light lunch. The maas and mayonnaise mixture makes for a tasty, tangy dressing that will soon become a favourite! Preparation: 10 min. Serves 4

  • Ingredients:

    8 large iceberg lettuce leaves
    12 calamata olives; drained
    4 ripe tomatoes; cut into wedges
    1 1/2 cups (375 ml) cucumber, sliced

    1/2 tub (100 g) feta; crumbled
    1/2 cup (125 ml) maas
    1/4 cup (60 ml) mayonnaise
    Salt and pepper

    2 tbsp. (30 ml) chopped parsley; plus extra to garnish

  • Method:

    1. Place 4 of the lettuce leaves on a platter so they form ‘cups’.
    2. Finely slice the remaining lettuce leaves and place inside the ‘cups’.
    3. Divide the olives, tomatoes, cucumber and feta between the cups.
    4. Whisk maas, mayonnaise, parsley and seasoning together, and drizzle over cups.
    5. Garnish with parsley before serving.
