  • Description:

    Thanks to this mini chocolate cake recipe, you don’t have to be an expert baker to impress your Valentine. These little goodies are so much easier to make than you might think – simply beat all the ingredients together and pop them in the oven. Finish the cakes with ganache, mini meringues and dust with icing sugar for a first-class chocolate dessert.

  • Ingredients:

    Cakes
    500 ml (2 cups) cake flour
    80 ml (1/3 cup) cocoa powder
    250 ml (1 cup) ground almonds (cake flour can be used instead for a cheaper option)
    10 ml (2 tsp.) baking powder
    375 ml (1½ cups) brown sugar

    200 g butter, melted
    3 eggs
    250 ml (1 cup) buttermilk

    Ganache
    150 g dark chocolate
    125 ml (½ cup) cream or plain yoghurt

    To complete
    24-30 mini meringues
    Icing sugar (optional)

  • Method:

    1. Preheat the oven to 180 °C. Grease 8 ramekins and dust with flour. Line a baking sheet with baking paper, grease and dust with cornflour.
    2. Cakes: In a large mixing bowl beat together the ingredients until well blended. Turn the mixture into the ramekins, filling them three-quarters of the way. Bake for 45 minutes or until a skewer inserted in the middle comes out clean. Turn out onto a wire rack to cool completely.
    3. Ganache: Melt the chocolate and stir in the cream or yoghurt. Cool until the mixture has a spreadable consistency.
    4. To complete: Put the cakes on a serving platter and cover each with ganache. Arrange the meringues on top and set aside until the ganache has set. Dust with icing sugar (if using).
