INGREDIENTS:

4 medium boiled potatoes

1 cup diced bacon, cooked and finely chopped (optional)

15ml dried thyme

15ml vegetable seasoning

200g cheddar cheese, cut into cubes

1 cup breadcrumbs

2 eggs, beaten

1L cooking oil

METHOD:

  1. In a saucepan, heat oil on medium heat.
  2. In a bowl, mash potatoes, add bacon, dried thyme and vegetable seasoning, until it’s properly mixed. 
  3. Start shaping the potato mixture into golf ball sizes. 
  4. Create a hole and stuff with a cheddar cheese cube.
  5. Dip the potato balls into beaten egg, followed by breadcrumbs and deep fry in heated cooking oil.
