DESCRIPTION:

Try this Fish Cakes recipe, made with hake and snoek fish, combined with mashed potatoes, herbs, and spices, then coated in crispy breadcrumbs.

INGREDIENTS:

1kg cooked hake and snoek fish leftovers

500ml (2 cups) potato mash, cooled

15ml (1 tbsp.) amasi or plain yoghurt

Salt and pepper

10ml (1 tbsp.) dry mixed herbs

2 eggs

500ml (2 cups) breadcrumbs

Oil to deep fry (optional)

Green bean, pea, and bacon salad to serve

1000 Island salad dressing

METHOD:

  1. Mix mashed potatoes, amasi, salt, pepper, herbs, and eggs in a mixing bowl.
  2. Flake fish using a fork and add to potato mixture. Stir to mix well until combined.
  3. Place breadcrumbs in a shallow bowl.
  4. Roll fish mixture into golf size balls between your hands.
  5. Dredge the fish ball in the breadcrumbs until well covered.
  6. Arrange breaded fish balls on a board and slightly push down to form a patty shape.
  7. Deep-fry fish cakes in preheated oil until golden brown or air fry for 15 minutes.
  8. Serve fish cakes with green bean salad and a drizzle of 1000 Island dressing.
