DESCRIPTION:

These Homemade Potato Tots are golden, crispy, and fluffy on the inside. Perfect as a snack, side dish, or finger food for kids, they're easy to make and can be customised with different herbs, spices, veggies, or cheese for extra flavour.

INGREDIENTS:

2 large Russet potatoes (or Sebago/King Edward), peeled and cut into chunks

30ml flour

1/8 tsp salt

1/8 tsp onion powder

1/8 tsp paprika

Oil for frying (vegetable, canola, or sunflower)

METHOD:

  1. Peel and chop the potatoes into chunks. Place in boiling water and parboil for 5 minutes. Drain well and let them steam dry in the colander until just cool enough to handle.
  2. Grate the potatoes and place them in a clean tea towel. Twist and squeeze firmly to remove as much liquid as possible.
  3. In a large bowl, mix together the flour, salt, onion powder, and paprika. Add the grated potatoes and stir until evenly combined.
  4. Shape the mixture into small, even-sized tots. If the mixture sticks to your hands, lightly coat your fingers with oil.
  5. Heat oil in a frying pan over medium heat. Fry the tots in batches until golden brown and crispy on all sides.
  6. Remove and place on paper towels to drain excess oil. Serve warm with your favourite dipping sauce.
