DESCRIPTION:

This BBQ Mini Meatballs recipe is an easy school-night meal, and you can use any leftovers as lunchbox snacks.

 

INGREDIENTS:

1 cup breadcrumbs

2 large eggs

2 tbsp. garlic; minced

1kg lean ground beef

1x500ml barbecue sauce of your choice

 

FOR BBQ SAUCE

¾ cup tomato sauce

2 tbsp. light brown sugar

1 tbsp. white vinegar

1 tbsp. Worcestershire sauce

2 tbsp. paprika

¼ - ½ tsp. cayenne pepper

METHOD:

FOR BBQ SAUCE

  1. Whisk or blend all the ingredients together until smooth.

FOR MEATBALLS

  1. In a large bowl, combine the breadcrumbs, eggs, and garlic.
  2. Add the beef and season with salt and pepper. Mix until well combined, then form into 1-inch meatballs.
  3. In a slow cooker, stir together the barbecue sauce and ¼ cup water.
  4. Add the meatballs.
  5. Cover and cook on low for 4 hours.
