Tomato Soup

2 tablespoons butter
1 onion; finely chopped
4 garlic cloves; minced
1 tbsp. dried oregano
2 tins canned tomatoes or 1kg fresh tomatoes
500 ml vegetable stock
1 cup fresh cream
Salt and pepper, to taste

Toasted Cheese

Two slices bread
5g margarine
2 slices cheddar cheese


  1. Melt the butter in a pan, then sauté onion and garlic until soft. 
  2. Add oregano, tomato and vegetable stock, then season with salt and pepper. 
  3. Let it simmer for 15-20 minutes, or until the tomato tastes well-cooked and sweet.
  4. While the soup is cooking, make your toasted cheese. 
  5. Spread margarine on both sides of the bread. 
  6. Place cheese in the middle and make a sandwich, then add to a non-stick pan and toast the bread until the cheese melts and the outside is golden brown.
  7. Using a hand blender, blend the soup into a smooth consistency, then pour in fresh cream and serve. If making a vegan tomato soup, leave out the fresh cream.
